Vegetable Biryani (Veg Biryani)

Ingredients:

  1. Rice 500g
  2. Green Chili 2
  3. Cumin seeds 1tbs
  4. Mix veg 1/2 kg packet (carrots, corn, peas,cauliflower, broccoli or any veg you like)
  5. Potatoes 2 large (Cut into small pieces)
  6. Bell pepper 1 large (Cut into small pieces)
  7. Bullet green chilli 3
  8. Tomatoes 4 large chopped
  9. Onions 1 large chopped
  10. Ginger and garlic paste 1 tbs
  11. Yogurt 1/2 cup
  12. Dried fenugreek leaves 2tbs
  13. Dried plums 12 pieces
  14. Kewra water with 1/2 tsp food colour
  15. Red chilli powder 1tsp
  16. Coriander powder 1 tbs
  17. Garam masala powder 1 tsp
  18. Salt 1/2 or 2 tsp
  19. Turmeric powder 1/2 tsp
  20. Fresh coriander 1/2 bunch
  21. Oil 1/2 cup

Recipe:

  1. Heat the oil in a pan add the onions, ginger & garlic paste and cook till gets golden colour, on high flame.
  2. Add the tomatoes, dried fenugreek leaves, turmeric, salt, coriander powder, red chilli powder, gram masala mix well and cook on high flame till the oil comes on surface and the tomatoes get cooked.
  3. Then add the mix veg and the potatoes, 1/2 cup of water mix well, wait for a boil and then lower the heat to medium and cook till the potatoes are cooked and the water dries and the oil comes on the surface.
  4. Then add the yogurt and cook on high flame till the yogurt also dries.
  5. Now add the dried plums, bell peppers, dill mix well and cook for further 2 minutes on high flame, and keep aside.
  6. To layer the biryani, first a layer of the veg then 80% boiled rice, then mix veg, remaining rice, then the fried onions, fresh coriander, kewra water and the yellow food colour mix, green chillies.
  7. Cover the lid with a tea towel and place on the pot of rice, place the pot on the stove first 5 minutes on high flame and 10 minutes further on low.
  8. Your veg biryani is ready, serve hot & good luck.
