Chicken Pilau

Method 1

Ingredients

     Stock:
  1. Chicken 1 kg
  2. Onions 2 medium (roughly chopped)
  3. Ginger & garlic paste 1 tbsp (heeped)
  4. Cumin seeds 1 tbsp
  5. Black pepper corns 5,6 pieces
  6. Cloves 1/2 tsp
  7. Green cardamom whole 4 pieces
  8. Salt 2 tsp (heeped)
  9. Cinnamon stick 2 inch piece
  10. Water 6 cup
     Rice:
  1. Rice 1 kg (washed and soaked for 1/2 hour)
  2. Onions 1 large (finely chopped)
  3. Ginger & garlic paste 1 tbsp (heeped)
  4. Oil 1 cup
  5. Green chilli 4 (sliced)
  6. Salt 2 tsp
  7. Cumin seeds 1 tsp
  8. Garam masala 1 tsp
  9. Chinese Salt 1 tsp
  10. Dried plums 12 pieces washed (optional)

Recipe

  1. In a large pan add the chicken, onions, ginger & garlic paste, cumin seeds, black pepper corns, cloves, green cardamom whole, salt, cinnamon stick, water mix well and wait for a boil on high flame.
  2. When it starts to boil cover and cook on low to medium till the chicken is completely cooked (10 to 12 minutes) and the stock is made.
  3. Now wash the rice and soak it for 15 to 20 minutes.
  4. When the chicken is cooked strain the stock in a bowl, discard the spices and take out the chicken and keep aside.
  5. Then in a large pot heat the oil then add cumin seeds, ginger & garlic paste, onions and cook on high flame till golden brown.
  6. Then add 3,4 tbsp water and stir well
  7. Then add the green chillies and stir for 2 minutes then add the chicken.
  8. Mix well the chicken till golden brown
  9. Now add the the stock and wait for boil then add salt, garam masala, chinese salt and lemon. Mix and then add rice(The stock should not be more or less than 1 1/2 inch over the rice if less than add water.)
  10. When the water dries  cover the lid with tea towel and simmer for first 10 minutes high flame and then 5 minutes on low flame.
  11. Serve hot

Ingredients

  1. Chicken 1 kg (16 pieces)
  2. Ginger garlic paste 2 tsp
  3. Salt 1 ½ tsp
  4. Red chili powder 2 tsp
  5. Cinnamon 2 sticks
  6. Black pepper corn 6
  7. Cloves 2
  8. Green cardamom 6
  9. Rice ½ kg
  10. Black cumin 1 tsp
  11. Yogurt 1 ½ cups
  12. Yellow food color ¼ tsp
  13. Garam masala powder 1 tsp
  14. Ground cardamom ½ tsp
  15. Nutmeg powder ½ tsp
  16. Saffron ¼ tsp
  17. Kewra water 1 tbsp
  18. Green chilies 6
  19. Green coriander half bunch
  20. Mint leaves 15-20
  21. Oil 1 cup

Recipe

  1. In a cooking pan put 1 cup water, chicken, ginger garlic paste, salt, red chili, cinnamon sticks, black pepper corn, cloves, and green cardamom. Cover and cook until chicken is done and water dries.
  2. In an other pan add sufficient water, black cumin, salt and boil rice until 80% done.
  3. Drain water out of the rice.
  4. In a bowl mix yogurt, yellow food color, garam masala powder, ground cardamom, nutmeg powder, saffron and kewra water.
  5. Pour this yogurt mixture on chicken and spread layer of rice. Pour oil on top, green chilies, green coriander and mint. Simmer on high flame for 5 minutes and on low heat for 10 minutes.
  6. Serve hot.
